Traditional Culurgiones Cooking Class in Cagliari
A fun workshop in the capital Cagliari: Making your own Culurgiones. This traditional pasta dish can be compared to the well-known ravioli, although the filling is not the same. This pasta is also folded in a very special way. During this experience you will learn all the tricks!
The cooking class starts in a homely atmosphere at 11:00 in the morning. Under the guidance of Damiano and his sister you make The Culurgiones yourself, a variant from Jerzu in the Ogliastra region. Every city has its own recipe and filling. The recipe of these Culurgiones officially comes from Damiano's grandmother who occasionally prepared Culurgiones at home with the whole family, for Sunday lunch or on holidays.
You start by making the pasta. Here you use a so-called "scivedda". Then comes the preparation of the filling. The dough, which has had to rest for some time, is then reworked and filled. Finally, you will learn to close the Culurgiones typically "a spighedda". As soon as this job is done, the water can be on the fire and you can sit at the table with a glass of wine.
